The author reports in this review the issues related to the diseases transmitted through food, related to incorrect handling by operators and to a non-scrupulous attention to personal hygiene and sanitization of environments where foods are produced and stored. The release by the authorized organization of the libretto for the food, but especially the periodic training of employees can protect from situations that undermine wellbeing (health) of the individual and society.
